I’ve never gotten into sitting down and watching the Olympics. Its quite boring.
So, i had this stage at a restaurant in SF for a line cook position. Honestly, your girl was scared shitless. I dont stress often, and if i do, i can hide it fairly well. Ok, so, i’m a guy, obviously, but for some reason being a gay man in a chauvinistic male populated industry, i will always have to prove myself. I mean, no one gives me heat for being gay, but thats just my mentality when competing for anything in this industry. I have to be just as good or even better than the man who has 10 years plus executive experience, the woman who leads the line or even an entry level kitchen assisitant.
Always, be better than the rest. Yet, me being a passionate person, a driven person, and has a ton of heart, i still get scared. I had drinks with one of my bests, Kawai, and she really broke it down that, “of course youre scared, i’d be worried if you weren’t! Its inevitable to make mistakes. You have to remember, we’re only cooking, something we do even when we’re not at work, we’re still cooking. We’re not doing brain surgery. You know your shit, babes”

it’s true- I work cleaner and smarter and told myself to never ever ever get lazy because of this bitch.
Benny, you are going to go so far, and even if I never work for you again, I am so proud to say that I got to share a kitchen with you at some point in my career. even if it was at 4AM to cater to some social media elites, whose website I have no idea how to use.
Erin Sweet is one of the externs i hold near and dear to this heart of mine. Chef still asks me how my externs are, and I reply, “eh, theyre still working on it..”. Chef’s reply? “well, they cant all be like erin sweet.” youre pretty much a legend at the cupboard.

Ive never been so grateful and touched. Lightbulb—im glad i can do that. Thats why i love this industry, moments like this.
